"Due uova - Two eggs!" Course
An intimate journey through the flavours and stories of Emilia-Romagna
Both of my grandmothers have passed, but my great-aunt Vilma — 92, still living alone, proud and independent — is my culinary guru. I call her often for advice, and every time I’m back in Italy, we cook together.
This is precisely the spirit of the courses I want to share with you: let’s cook together, just as families have always done.
My house, your house, one-to-one or in a small group — the important thing is being around a table, hands in the dough, chatting, tasting, learning.
And now, with the colder season approaching, there is something truly special about gathering in a warm kitchen.
I can come directly to your home for a private cooking class. I’ll bring all the tools, the fresh ingredients, and that Italian atmosphere that makes everything feel cosy and joyful.
We’ll cook side by side, open a good bottle, and enjoy the pleasure of preparing a beautiful meal together.
Then, when it’s time for you and your guests to sit down and enjoy dinner, I’ll quietly tidy up the kitchen and leave you to your evening — relaxed, happy, and well fed.
Here are some course examples:
Emilia-Romagna, our region, is renowned for its tradition of fresh egg pasta. In the past, a visit to a local household would often result in the offer of ‘due uova’-two eggs of tagliatelle, a dish that carries with it the essence of our culture.
Despite the common misconception, making egg pasta is not a tedious task. And the health benefits are a bonus. With the egg (100g flour/1 egg makes two pasta portions), you’re consuming fewer carbohydrates and introducing a high-quality source of protein (eggs) into your diet.
So, why give it a try? Let’s embark on this culinary adventure together.
Menu:
- Tagliatelle – you will learn to do your tagliatelle
- Sugo with sausages and tomato – quick and delicious
- Tiramisu’ della Nonna Lidia – my grandmother’s re-interpretation of this classic dessert
"The Perfect Thursday Meal" Course
When I was a child, I didn’t eat many things. My grandmother would pick me up from school and cook everything from scratch. We had a deal: I’d try more foods, and on Thursdays, she’d cook all my favourites. Over time, word spread—by the end, four to five kids would join us every Thursday for the “Perfect Meal.”
Menu:
- Gramigna alla salsiccia – Gramigna is both a type of pasta and a sauce. It’s not very popular, except in my region, Emilia-Romagna.
- Scaloppine di pollo alla pizzaiola – My grandmother had an excellent instinct for healthy food. She used chicken a lot.
- Budino al cioccolato con amaretti – a traditional spoon dessert always ready in her fridge
