Cooking course example

It was an absolute pleasure to teach Maira’s family and friends the two-egg fresh pasta cooking class at Maira’s home. This course is inspired by the tradition of Emilia-Romagna, where, in the pasta, a visit to a family often involved being offered “due uova” — two eggs of tagliatelle — a simple dish that embodies the essence of our culture.

Making egg pasta is not as complicated as many believe. With the proper technique, it is quick, satisfying, and also nutritionally balanced: 100g of flour and one egg produce two portions of pasta, which means fewer carbohydrates and a high-quality protein source from the eggs.
Together, we prepared the entire menu:
• Tagliatelle – made entirely by hand by everyone
• Sugo with sausages, Lambrusco and tomato – quick, rich, and comforting
• Tiramisù of Nonna Lidia – my grandmother’s reinterpretation of the classic dessert
I also brought a few bottles of Lambrusco wine for everyone to try. In the end, everyone sat down together to enjoy what they had made — relaxed, generous, and full of good energy.
